Enjoy this easy creamy chicken and leek soup recipe from GAPS Introduction Stage 2 or Full GAPS, it’s so tasty and packed full of meat stock, and non-starch low-carb veggies that are easy to digest.
Tips for Making Easy Creamy Chicken and Leek Soup
- Don’t overcook the veggies. You want them fork-soft to make them easily digestible but not mushy.
- If you don’t have any chicken meat stock or shredded chicken on hand, you can make it as you go. I show you how in my chicken meat stock post. Once the meat stock is made using chicken drumsticks, remove the meat and bones and add your veggies. It can be done all in the same pot and save on washing up!
Sourcing Tips: Choosing Quality Ingredients
Chosing quality ingredients when healing your gut is super important. Here are a few things to consider :
- Opting for organic produce where possible to help with increased nutrient uptake and a reduction of toxins (pesticides) in the body.
- Using homemade short-cooked meat stocks
- Opting for a high-quality mineral salt such as Celtic Sea salt as it is less processed than other salts and is packed full of trace minerals like magnesium, calcium, and potassium which can support the body’s electrolyte balance.
Ingredients
- 1 leek, thinly sliced
- 2 carrots, diced
- 1 zucchini, diced
- 1/2 head of cauliflower head, florets
- 1.5-2L chicken meat stock
- 2 cups cooked chicken, shredded
- 1/2 cup ghee
- 2 tsp peppercorns
- 3 garlic cloves
- 1 tbsp Sea salt
Tools you’ll need
- Knife and chopping board
- Large soup pot with lid or Dutch oven
- Measuring cups and spoons
- Immersion blender
How to make Easy Creamy Chicken and Leek Soup
1. Chop the cauliflower into quarters and place it in a heavy-based saucepan. Add the sliced leek, diced carrots, and zucchini.
2. Add the chicken stock, peppercorns, salt.
3. Bring to a boil, reduce to low heat, and simmer until cauliflower is fork soft.
4. Turn off the heat and remove the peppercorns then discard.
5. Scoop out the cauliflower into a wide-mouth jar or bowl and add 1 cup of the cooking liquid, garlic cloves, and ghee to the cauliflower. Blend with an immersion blender until smooth.
6. Return the cauliflower mixture to the saucepan and mix in the shredded chicken.
7. Allow to stand for 5-10 mins then ensure the chicken has heated through.
8. Check salt is to taste and serve.
Serve with a drizzle of olive oil, sour cream or sauerkraut.

- Egg yolks – Boost nutrition by adding raw egg yolks. Simply blend with the cauliflower.
- Dairy-free – If you haven’t introduced dairy yet, swap the ghee for lard.
