This garlic mint lamb chops recipe is so delicious and full of flavour. Quick and easy to throw together in the slow cooker for a simple mid-week meal.
This is one of those great, prep in the morning, chuck in the slow cooker type dinners that I love.
Let your slow cooker do the hard work – minimal effort, maximum flavour and all the tenderness!
What cut of lamb to use?
My favourite cuts to use are lamb loin chops and lamb shoulder chops (lamb forequarter chops), but you could use:
- Lamb Shoulder Blade Chops
- Lamb Forequarter Chops
- Lamb Neck Chops
Ingredients
- 4 lamb chops
- 13-15 garlic gloves
- 2-3 tbsp fresh mint, finely chopped
- 1 tsp salt
- 1 cup filtered water
Tools/ utensils you may need
- Chopping board
- Knife
- Measuring spoons
- Measuring cups
- Slow cooker
How to make Garlic Mint Lamb Chops
Step 1: Peel and finely chop the garlic.
Step 2: Finely chop the fresh mint.
Step 3: Add the lamb chops to the bottom of the slow cooker and sprinkle in the garlic, mint and salt.
Step 4: Add the water, cover and cook on low for 8 hours. Serve with a side of green beans and sauerkraut or cauliflower mash.
How to store
Store the leftovers in an airtight container the fridge for 3-4 days, or freeze for up to 3 months.
